Avocado Toast with Feta and Chilli

As more of an early bird than a night owl, I’m definitely a breakfast kinda-gal. The days where I don’t have something decent to eat post-school run (hello, Freddie’s birthday Coco Pops) I’m left ravenous by 11am. So in order to stop me from having my head permanently in the fridge, I NEED a good brekkie. Often I’ll have porridge with blueberries and a cup of green tea/juice, and sometimes I’ll have the Instagrammer’s favourite, eggs and avocado on toast *yawn*

Boring it may be, but I still LOVE this to eat on a morning, even if it does seem oh-so-2015. To mix it up a bit though, I sometimes make what is currently my new fave- Avocado and Feta on Toast with Chilli (best on sourdough toast, yum!). The chilli gives it a bit of a kick and me a bit of a boost in return, and feta and avocado together = AMAZING. There’s also a lot of goodness on this one plate- carbs, protein, and plenty of vits and good fats from the avocado. What’s not to love?

Now I just need to persuade the children that eating avocado and feta toast is the way forward…

Avocado Toast with Feta and Chilli

Here’s how I make Avocado and Feta Toast with Chilli:

  1. Halve avocado, scoop out the flesh
  2. Using a fork, mash the avocado up
  3. Add a squeeze of half a lemon and mix together
  4. Toast the rye bread
  5. Spread the avocado mixture onto the toast
  6. Crumble the feta cheese on top
  7. Sprinkle chilli flakes on top to taste

Serve with fresh juice and/or a cup of green tea!

So easy….
