But what exactly are freeze-dried sweets, and how do they differ from regular sweets?

What Is Freeze-Drying and How Does It Work?

Freeze-drying, also known as lyophilization, is a preservation process that removes moisture from food by freezing it and then slowly lowering the surrounding pressure. This causes the ice in the food to turn directly from solid to vapour, skipping the liquid phase entirely. What’s left is a food product with its structure, nutrients, and flavour intact, but without any moisture.

The lack of moisture prevents spoilage and significantly extends shelf life, making it perfect for preserving fresh fruit, vegetables, and now, sweets. When fruits are freeze-dried, they retain most of their vitamins and minerals, unlike other drying methods that may lead to nutrient loss. This makes freeze-dried fruit candies a healthier alternative to regular fruit-flavoured sweets, offering a natural source of vitamins along with a delicious taste.

Because moisture is removed, freeze-dried sweets are less prone to spoilage and can be stored for a much longer time without going stale. This makes them a better option for stocking up on snacks without worrying about expiration dates or loss of freshness.
